Happy Sunday! It's time for ROTW - Vegan Coleslaw. Coleslaw is mainly made from cabbage. Cabbage is low in calories and packed full of nutrients. It is especially rich in vitamin B6 and folate, both of which are essential for many important processes like energy metabolism and the normal functioning of the nervous system. It's also high in fiber and has powerful antioxidants. Antioxidants protect the body from damage caused by free radicals. Free radicals are unstable molecules and when their levels become too high, they can actually damage your cells.
